Black Bean Chili with Quinoa
(makes 4 servings 1 1/2 cups chili and 1/4 cup quinoa each)
4 teaspoons of extra virgin olive oil
1 medium onion, chopped
1 large red bell pepper, chopped
2 cloves garlic, chopped
2 cans (16 ounces each) lower sodium black beans, drained
1 (16 ounce) tomato sauce
2 teaspoons mild chili powder
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon Himalayan salt
3 cups cooked quinoa

In 2011 I was introduced to Insanity The Asylum. Insanity with even more intensity. Imagine Insanity while jumping rope and keeping your feet in an agility ladder.
